Time-temperature indicators (TTIs) are devices or smart labels that visually show the cumulative time-temperature history of a product. They change appearance, often through a color change, when the product has been exposed to temperature conditions that could compromise its safety or quality. This provides a more accurate, dynamic indication of remaining shelf life than a static printed date label.

TTIs function by integrating the effects of both time and temperature into a measurable, often visual, output. Their response kinetics are designed to mimic the degradation kinetics of the specific product they are monitoring. There are several types of TTIs. Diffusion-based TTIs work by having a colored dye migrate along a porous strip at a temperature-dependent rate. Enzymatic TTIs use a reaction, such as a pH change triggered by lipase activity, to cause a color change. Polymer-based TTIs rely on the temperature-dependent polymerization or degradation of a monomer, which results in a color transition.

The key advantage of a TTI is its ability to account for temperature abuse throughout the supply chain. A product with a fixed ‘use by’ date might be spoiled before that date if left in the sun, or it might be perfectly good long after if kept consistently refrigerated. A TTI reflects the actual thermal history, providing a true status of the product’s quality and safety, thereby reducing food waste and enhancing consumer confidence.
